Luce Ristorante was founded in 2018 by Paolo and Francesco Gori, who wanted to combine Umbrian tradition with contemporary cuisine, through a logic not of revisitation, but rather of updating recipes and cooking techniques. The research takes place on cooking texts dating back to the Middle Ages to draw inspiration. All this is then translated into dishes that are easy to understand but with roots firmly planted in the Umbrian tradition.
